4 slices thick cut bacon
1/2 onion chopped
2 cloves garlic chopped
6 cups water
2 bullion cubes
5lb potatoes minus like three cubed
1 large broccoli cut into bite size pieces
1/4-1/2 cups plain greek yogurt or sour cream
1-2 cups shredded cheese
freshly ground pepper
fry bacon and cut into small pieces. set aside.
in large soup pot sautee onions and garlic in butter until translucent. add water and bring to a boil. stir in bullion cubes. add potatoes and broccoli. simmer until potatoes and broccoli are really mushy. take pot off the heat and mash up the veggies but make sure there are still some lumps.
stir in sour cream and cheese until melted. stir in bacon. season with pepper to taste and serve hot.
